PW Cooking Update

I have a few more recipes to add to my Pioneer Woman cooking attempts

1) Fried Chicken - I used chicken strips = YUMMY
2) Mashed Potatoes - Perfection
3) Cheese Grits - halved the recipe and we still have grits for days
4) Rib-eyes in Whiskey Cream Sauce - I had no whiskey readily available, so I had to do without.  Still turned out great.
5) Chicken Spaghetti - Really Really Good, but I think next time I'll only use 1 cup of chicken broth instead of the 2 that the recipe calls for.
6) Apple Pie - my crust fell apart. I made PW's homemade pie crust recipe for the apple pie, and it completely fell apart.  It may have something to do with the holes that were in it because I stretched it too much, but I doubt it.  Nevertheless, it was still GREAT even if the pie crust and filling were all mixed in together!

A New Floor

For Christmas my in-laws surprised us with a great gift - laminate hard wood floors for our living room!  I had been complaining about little muddy paw prints, and the constant headache of scrubbing carpet.  I had declared war against that carpet, but it was a losing battle. I suppose the in-laws had pity on knees, back, and arms and knew that extreme measures needed to be taken.  So goodbye carpet, you will not be missed!

The husband and I had been searching for the perfect flooring, and we actually decided to go with a peel and stick faux hardwood instead of the real deal.  The price difference was huge, and I can't even tell the difference between the peel and stick and the real deal.  The real deal is WAY over-rated in my opinion...

Also notice the yucky mirrors with the terrible frosting are gone!  They were replaced with the mirrors surrounding the tub in the master bath.  I have yet to determine why anyone in their right mind would put mirrors around a bath tub, but they are gone now!
I just have to figure out what to do with all this blank space...

Enchiladas!

The husband loves Mexican food.  I used to not be the biggest fan of Mexican, but I must say that over the past year I have discovered just how tasty ole Mexican food can be!  So in honor of my new found love for south of the border food...I made enchiladas!  Not just any enchiladas, but Pioneer Woman's enchiladas.  They were yummy!  A little difficult to make though. I had to do three things at once...I am much better at casseroles!

Just a little lesson in multitasking!
